Vegetable Biryani Recipe

Ingredients
- 2 cups rice, washed and drained
- 1 cup mixed vegetables, chopped
- 2 tablespoons cooking oil

- 2 green chilies, slit
- 1 inch ginger, grated
- 4 cloves garlic, minced
- 1 large onion, finely sliced
- Salt to taste
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Fresh coriander for garnish
Preparation Method
Heat oil in a large skillet or pot over medium-high heat. Add cumin seeds and let them splutter.
Add onions and sauté until they turn golden brown, about 5-7 minutes. Stir occasionally to prevent burning.
Add ginger, garlic, and green chilies. Cook for another 2 minutes until fragrant.
Add the mixed vegetables, salt, and turmeric powder. Mix well and cook for 3-4 minutes.
Add the washed rice and gently stir to combine with the vegetables and spices.
Pour in 4 cups of water. Bring to a boil, then reduce heat to low.
Cover and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Sprinkle garam masala and fresh coriander. Fluff with a fork and serve hot.
